This isn’t a great recipe if you don’t eat meat, but for those of us who are just pretending we don’t eat meat or for those who dismiss high cholesterol as part of a conspiracy theory to scare us into healthy, well-rounded, responsible human beings like global warming or “exercise,” this is a great breakfast-on-the-go that is jam-packed with protein.
I cooked these sausage, egg and cheese cups for my friends who just had a baby because A) I’m a good woman, B) these only had 3 ingredients, and C) they’re easy for new moms to eat over the sink at 4 a.m. as they helplessly wonder how many more hours of cry a baby has left.
